Banana Macarons with Coconut Cream
This month on MacTweets we are creating macarons inspired by a wild animal or “Taking A Walk On The Wild Side“. My macarons weren’t inspired by a wild animal, but instead by adventures to a jungle…a regular Indiana Jones wild adventure! Through the jungle we have to survive all the other wild animal inspired macarons. In our plight, we must regain our strength and take nourishment from jungle fare. What to eat in the jungle? Bananas and coconuts are plenty so we gather new energy sources from Banana Macarons with Coconut Cream!
I used a teaspoon of banana extract and 1/2 teaspoon of yellow food coloring paste (paste from Williams Sonoma). Still having some issues with their being too much moisture in the piped shells, so had some slightly over-spread pied. The filling is a lusciously sinful coconut cream that can be used in other cream filled desserts.
Teenie Notes:
- For the macaron shells, see my post from October 2009 for Parisian Macarons.
- Used 1 teaspoon banana extract and 1/2 teaspoon yellow food coloring paste for the macaroon shells.
- I doubled the recipe for the coconut cream filling (listed below) and had plenty leftover. You can easily half the recipe.
- After filling the macarons and they are sandwiched together, I later rolled the sides in shredded coconut. It gave it a “cute” and different look with coconut flakes skirted out the sides.
- I had never used “cream of coconut” before and initially had a hard time finding it in stores. I tweeted about it and my problem solved through Twitter! Many thanks to Kate of Savour Fare for suggesting I look in the liquor aisles of my local markets as they are used in Pina Coladas. Bingo! That’s where I found it (Vons). =)
Coconut Cream Filling for Macarons

4 tablespoons cream of coconut
1/2 cup vegetable shortening
1 1/2 cups confectioner’s sugar
2 teaspoons coconut extract
Directions
Put butter, cream of coconut, and shortening in bowl of electric mixer with paddle attachment. Mix on medium speed until smooth. Add confectioner’s sugar and coconut extract; mix until pale and fluffy. Store extra in refrigerator.

Great photos as always, the combination you chose for this months MacTweets was spot on, what better than banana & coconut! I’m so giving your coconut cream a try, it sounds amazing!
Oooh, that coconut cream must be SO good! Beautiful!
I like your thinking by putting these flavors together! They look perfect, too. Yummy!
The color is beautiful, a lovely yellow shade, and the coconut cream sounds heavenly! Perfect combination, and definitely “jungle” appropriate. ;)
Banana cream and Coconut cream are my two favorite pies – I can get them both here! Delicious!
Cristina – the perfect combination in a macaron! I also think of George of the Jungle with this one, LOL! I just love the happy yellow color, I imagine it must taste SO good.

They look so adorable and I love the colour you obtained. You mentione the flatter shape – wondering if you aged the egg whites at all? That could explain the pretty frilly feet too. I think they look perfect as they are though, and the flavours sound delicious.
Beautiful. I like the banana-coconut combination. Still haven’t been brave enough to try macarons–soon, maybe.
Congrats on your Top 9!
I love the color and your feet! I used creamed coconut as part of my filling as well- fabulous stuff!
These macaroons look fantastic! Your photography is gorgeous and I really like the way the use of “teenie” appears throughout your blog and unifies it. Truly, a great blog!
These sound great. Makes me think I need to do a summery type macaron…soon!
Wow, amazing! I just came back from France and Paris, and I had soo many great macarons but never a banan one. I’m intrugied!

Such gorgeous tropical flavors! I would choose these over most other macaron flavours, except pistachio!!
I thought I had seen and tasted all manner AND colors of macarons; not this time! Brilliant idea and the filling is a great contrast with the banana flavor. I would so love to have one with my coffee right about now!
Stylish.
