Wild Alaskan Salmon with Spinach, Tomatoes & Feta

This is a healthy, flavorful and light dish that leaves you feeling satisfied after the meal. It’s an elegant and quick to prepare dinner. We try to include salmon in our diet at least 1-2 times a week. This is just one of the ways we prepare it.

These beautiful salmon fillets comes in a package of six individually wrapped and marinated Wild Alaskan Salmons from Morey’s, purchased at Costco (Kosher certified and Gluten free). Place it in the oven either thawed or frozen and from about 15-25 minutes your fillets are ready to serve with rice, pasta or on a bed of spinach, as I have suggested here.

A dinner like this was never easier!   Pair it with a glass of Pinot Noir.

Wild Alaskan Salmon with Spinach, Tomatoes & Feta

Serves 2

Ingredients

2 Salmon fillets

2 cups fresh Spinach leaves, cleaned
2 Roma tomatoes, sliced
4 tablespoons feta cheese, crumbled

Light Vinaigrette OR lemon juice, to drizzle on spinach
Salt and pepper, to taste

Directions

Prepare your marinated salmon fillets, either using the suggested fillets from Morey’s (purchased at Costco) or using other sourced salmon fillets, marinated in complimentary season.

Arrange 1 cup of the spinach leaves on each dinner-sized plate. Place Roma tomato slices on top of the bed of spinach. Crumble 2 tablespoons feta on each plate,  sprinkling the feta evenly around the plate and on top of the tomatoes and spinach. Drizzle with a light vinaigrette or lemon juice and salt and pepper to taste. Place one salmon fillet on top of the bed of spinach, tomatoes & cheese arrangement.

Serve immediately.

I have really enjoyed view the site and can’t wait to try this recipe. I too LOVE this salmon. Found it at Costco and always keep these in my freezer for a quick dinner. In the summer, we grill the salmon outside and i serve it over a bed of mixed greens. I put diced mango around the edges of the bowl of greens, the salmon in the center and serve it with a dressing of equal parts honey and balsamic vinegar. Very easy and tasty.

Hi Cindy: Thx for your feedback. I’m with you about always having some of these salmon filets in the freezer. It sure is a good meal and so versatile.

Using mango with it and your honey/balsamic vinegar sounds like a fantastic flavor combination!

Wow, this looks wonderful! I like to top salmon with something very similar – mushrooms, grape tomatoes and spinach sauteed in butter and topped with Parmesan cheese. This is a less-heavy, gorgeous summer recipe though – Great job!
