Hi Cindy: Thx for your feedback. I'm with you about always having some of these salmon filets in the freezer. It sure is a good meal and so versatile.

Using mango with it and your honey/balsamic vinegar sounds like a fantastic flavor combination!

This would be a good salmon to try if you can find it. It is already marinated and no fishy taste!

I have really enjoyed view the site and can't wait to try this recipe. I too LOVE this salmon. Found it at Costco and always keep these in my freezer for a quick dinner. In the summer, we grill the salmon outside and i serve it over a bed of mixed greens. I put diced mango around the edges of the bowl of greens, the salmon in the center and serve it with a dressing of equal parts honey and balsamic vinegar. Very easy and tasty.

Thank you for posting all the wonderful recipes and the photography is amazing.

So glad i found your site!

Thank you, Jessica - it's a great dish that's quick, easy and very flavorful. Serving it on a bed of fresh spinach makes it even that more healthful and pretty too! :)
