This is another spin on Banana muffins, using seasonal, fresh strawberries. If you’ve been visiting TeenieCakes.com, you may have already caught my fondness for:

  • Baking
  • Muffins
  • Fruit and vegetable based muffins
  • Breakfast type food

It’s not to imply that I don’t enjoy cooking or other types of baked goods. That would be the farthest from the truth. It’s just that I seem to unconsciously gravitate towards the aforementioned. When mornings are rushed and breakfast must be on the go or later on at the office, I’d rather something homemade than a packaged granola/energy bars. Hopefully the morning lends time for fresh fruit or wholesome breakfast cereal…but that’s not always the case. Also, muffins, scones and biscuit are a type of “portion-controlled” serving (I like that word and concept…”portion-controlled“).

In reference to sweets, baked goods and desserts, my Dad lovingly always reminded me and my sisters:

Teenie Notes

  • Make sure those bananas are “ripe”. I mean, the peel is evenly dark and it looks ugly inedible.
  • Cutting the strawberries into these smaller pieces makes it more proportional with the size of the muffin and when pressing them into the batter, they won’t be so heavy and all sink down to the bottom.
  • I have sometimes added a teaspoon of cinnamon to the batter. It’s a tasty variation, but with the sweetness of the bananas and strawberries together, it’s really optional and “may” be too much flavors in one little muffin.

Makes 10 muffins

Banana Strawberry Muffins Ingredients

Ingredients

1 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt

3 bananas, very ripe and mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter melted

1/3 – 1/2 cup walnuts, chopped

1/2 cup fresh strawberries, stems removed, sliced and quartered

Oat Streusel Topping

2 tablespoon oats, preferably old-fashioned (not instant)

1/3 cup packed brown sugar

2 tablespoons all-purpose flour

1/4 teaspoon ground cinnamon

1 tablespoon butter, cold

Directions

Preheat oven to 375 F degrees. Use non-stick spray to coat muffin tins to accommodate 10 muffins or use liners.

In a large bowl, mix flours, baking soda, baking powder and salt. In another bowl, mix mashed bananas, sugar, egg, melted butter and walnuts. Stir into flour mixture until incorporated. Using a large cookie scoop or spoon, portion batter into prepared muffin pan.

Banana Strawberry Muffins - Prep

Push at least 4-5 pieces of strawberries into each muffin batter, evenly distributing the fruit.

In a small bowl, mix together oats, brown sugar, flour, ground cinnamon. Cut in cold butter until the mixture is like cornmeal. Spoon streusel topping over each muffin.

Bake in preheated oven for 15-18 minutes. Insert a toothpick into center of muffin top to check for doneness (toothpick should come out clean). Cool muffins for 5 minutes in pan before removing. Transfer to a cooling rack and allow to cool at least 15-30 minutes before serving (this gives the fruit a chance to cool and set in the muffins).

I tend to gravitate towards muffins as well, I bake a batch every weekend and eat one every day! These look excellent, and with all the fresh strawberries at the farmers market right now I’ll have to try them soon!
