This is my rendition of a childhood favorite soup (sopa) that my Mom used to make with fideo, estrella (stars) or alphabeta pasta. My changes over the years has been the seasonings and addition of vegetables, serving it with small cubes of Cotija cheese and garnishing the top with crumbled Cotija, as well.
