We’re layering healthy ingredients in this parfait with low fat vanilla yogurt, spiced pumpkin butter and pumpkin pecan granola. It’s a welcoming parfait for the season but can really be enjoyed any time of the year.
These are tasty, quick to make little treats that give a sense of wholesomeness with the use of strawberry jam/preserves and old-fashioned oats. Easily substitute your favorite jam variety for the filling!
I had a couple of tired Bosc pears that were on their way to the point of no return. It was a no brainer where the fruit were destined for promotion…muffins or some type of quick bread. For the muffins pictured in this post I used Bosc pears.
In these muffins, the stars are the cranberries with their beautiful, rich, red color and firm texture that hold up well. Paired with white chocolate to offset the tartness and the woodsiness that are walnuts, they’re great coffee house type muffin to serve anytime of the day.
