Fresh Fava Beans, Tomatoes & Mint Bruschetta

Note: Measurements of ingredients are to taste

Ingredients
  • fresh baguette, sliced in diagonal
  • 1-2 garlic cloves
  •  
  • fresh fava beans, shelled
  • cherry or grape tomatoes, quartered & seeded
  • fresh mint, roughly chopped
  • fresh lemon juice
  • extra-virgin olive oil
  • salt and freshly ground pepper to taste
  • red pepper flakes
Method
  1. Toast the bread slices: Warm a grill pan on medium. Place slices on the grill pan and apply your grill pan press. Toast until golden and the texture is toasted. Alternatively, you can also broil them in the oven. Rub each toast with garlic clove. Set aside.
  2. In a mixing bowl (the size to accommodate the amount of ingredients you will add), place the prepared fava beans, tomatoes and mint and squeeze lemon juice over the ingredients. Drizzle some olive oil and give it a gentle toss to incorporate and coat the vegetables/herb with the juice and oil. Add salt and pepper to taste.
