Lighter Honey Peach Ice Cream
8, ½ cup servings
Ingredients
  • 3 cups roughly chopped, peeled peaches (about 1.5 pounds)
  • 1 cup half-and-half
  • 1/3 cup sugar
  • 1-2 tablespoons honey
  • ½ cup low-fat (2%) milk
  • 1 teaspoon vanilla extract
Method
  1. Combine peaches and remaining five ingredients in a large bowl.
  2. Pour peach mixture into the freezer canister of an ice-cream/gelato machine and freeze according to the manufacturer’s instructions.
  3. Transfer ice cream into a freezer-safe container, cover and allow to freeze at least an additional 2-3 hours to overnight.

  • I’ve used juicy, sweet Babcock peaches in this recipe.
  • If you would prefer not to have chunks of peaches in your ice cream, run it through a food processor or blender to roughly break down.
  • I’ve cut the sugar down on this recipe, but added the 1-2 tablespoons of honey.
