Maple, Honey Nuts & Fruit Granola

Maple, Honey Nuts & Fruit Granola
Makes about 6-7 cups
Ingredients
  • ¼ cup butter (or vegan butter), melted
  • ¼ cup pure maple syrup
  • ½ cup honey
  • 1/3 teaspoon coarse salt
  •  
  • 3 cups old-fashioned oats
  • 1 cup unsweetened puffed wheat cereal
  • ¾ cup almonds, coarsely chopped
  • ¾ cup pecans, coarsely chopped
  •  
  • ½ cup dried cranberries or dried sour cherries
  • ¼ cup golden raisins
Method
  1. Preheat an oven to 325°F (165°C). Line baking sheet with foil, parchment paper or silicone baking mat.
  2. In a large bowl, whisk together the butter, maple syrup, honey, and salt. Stir in the oats, puffed wheat cereal, almonds, and pecans, mixing to coat completely. Spread evenly in prepared baking sheet. Bake, stirring every 10 minutes, until the mixture is golden brown about 30 to 35 minutes.
  3. Let cool completely, then stir in the cranberries and golden raisins.

Teenie Notes
  • Like most granola, this is very versatile. Suggestions to add-ins: Dried apricots, dried figs, sunflower seeds, coconut, walnuts, sesame seeds, pepitas, dried apples, chocolate chips, dried bananas, dried mangoes, macadamia pieces, etc.
  • Look for an organic, unsweetened puffed wheat cereal that is fat, sugar and sodium free.
  • Make if vegetarian or vegan friendly by substituting the butter for a complimentary oil or using vegan butter.
