Organic Chai & Vanilla Yogurt Popsicles – Method 1

Makes 6, 4-oz popsicles

Ingredients

2 1/4 cups Lowfat Vanilla Yogurt

1 tablespoon + 1 teaspoon granulated sugar

1 cup Organic Chai Concentrate (see Teenie Notes for alternative options)

Directions

In a medium sized bowl, combine the yogurt with sugar. Add the chai concentrate and using a whisk, whisk the ingredients until thoroughly combined.

Pour and evenly disperse the yogurt-chai mixture among six, 4-ounce popsicle molds.

  • If your popsicle molds have the lid/handle combination, place the tops on the molds. Lightly tap molds on your kitchen counter to release any air bubbles.
  • If you’re using popsicle sticks, very lightly tap molds on your kitchen counter to release any air bubbles. Place molds in the freezer for 30-45 minutes or until the mixture is more firm. Add popsicle sticks to the molds and return the molds to the freezer.

Freeze popsicles for 6 hours to overnight before serving.

In this version of the Organic Chai & Vanilla Yogurt Popsicles, I’ve separated the chai from the yogurt. The chai layer is more icy/granita textured and as you eat your way towards the yogurt layer, it’s almost pudding-like.

Makes 6, 4-oz popsicles

Ingredients

3/4 cup milk

3/4 cup chai concentrate

1 1/2 cups Lowfat Vanilla Yogurt

2 teaspoons granulated sugar

Directions

Combine the milk and chai concentrate, mix well. Pour 2 ounces/1/4 cup of the milk/chai mixture into each popsicle mold. Place in the freezer and freeze for 45 minutes or until the mixture is firm.

Combine the yogurt with the sugar. Using a small spoon, evenly disperse the yogurt mixture among the popsicle molds. Lightly tap molds on your kitchen counter to release any air bubbles.

  • If your popsicle molds have the lid/handle combination, place the tops on the molds.
  • If you’re using popsicle sticks, place molds in the freezer for 30-45 minutes or until the mixture is more firm. Add popsicle sticks to the molds and return the molds to the freezer.
