Sweet Potato, Pecan and Cinnamon Bread

Sweet Potato, Pecan and Cinnamon Bread
One, 2-pound loaf
Ingredients
  • ¾ cup water, room temperature
  • ⅔ cup mashed sweet potato (see note for prep)
  • ⅔ cup chopped apple, with peel, cored
  • ¼ cup nonfat dry milk
  • 1½ teaspoon salt
  • 3 tablespoons granulated sugar
  • 3 tablespoons canola oil
  • 3¾ cups bread flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1¼ teaspoons instant yeast
  •
  • ½ cup chopped pecans
  • 1/3 cup raisins
Method
  1. Wash, scrub, and dry a sweet potato. With a fork, prick holes around the potato at least 4-5 times. Loosely wrap in a paper towel and microwave on high for 4-7 minutes, rotating half-way (your time may vary). Cook until the sweet potato is tender.
  2. When the sweet potato is cool enough to handle, cut in half and scoop out the potato, mashing with a fork. Measure out 2/3 cup and set aside to completely cool.
  3. Measure out all the ingredients EXCEPT the pecans and raisins into the bread machine’s baking pan in the order that the manufacturer recommends.
  4. Fit baking pan in the machine’s chamber and select SWEET CYCLE.
  5. Add the pecans and raisins when the machine indicates (or before the first rise).
  6. Allow to cool before slicing for best serving results. © Images & content: Cristina A-Moore for TeenieCakes.com.
